2020 has been a challenging year for livestock farmers and red meat packers in NY. With many packers already booked solidly for 2021, livestock farmers are feeling panicked about how to get their animals harvested in a timely way. This has driven unprecedented interest in opening new slaughterhouse facilities in the state. But anyone who doesn't already have a strong background and expertise in the industry faces a steep learning curve, with high risk and a large investment of money.
This free webinar will lay out some of the primary considerations for opening a red meat slaughter and processing facility, from infrastructure to regulations and from labor to financing. Presenter Marty Broccoli of Cornell Cooperative Extension in Oneida County has 40 years of experience in the meat packing industry, and provides technical assistance for new plants in NY. Keith Schrader is a long-time beef farmer who owns Schrader Farms Meat Market, a USDA slaughterhouse in Romulus, NY. Both will share key tips and lessons learned, with ample time for Q&A.

The Michigan State University Small Ruminant Team will be hosting their annual "Birth Management for Sheep and Goats" program virtually this year. Cornell Cooperative Extension's Livestock Program Work Team ( LPWT ) is pleased to announce the second in a series of beef production virtual learning opportunities: Introduction to Stocker Cattle. Stocker cattle are typically light weight calves, either heifers or steers, that are successfully weaned and available to enter the beef production phase with the main objective of adding body weight efficiently and economically prior to the finishing phase. Many regions of New York are well suited for stocker cattle during our grazing season allowing producers to make use of lush pastures or underutilized acreage. This class will review best management practices for raising pigs, and discuss some of the ways that producers can integrate pigs into their current production system or design a new system that suits their specific needs and resources. Starting a Livestock Farm Workshop Series

There are many aspects to consider when starting a livestock farm, such as land, what to sell, and how to sell it. Cornell Cooperative Extension's Specialists Nancy Glazier and Joan Sinclair Petzen are offering a beginning farmer educational series via Zoom beginning 7:00-8:30 pm February 24. The two sessions will cover resource assessment, business planning, basic bookkeeping, and budgeting. Time will be available each evening for discussion. Follow-up sessions will be held biweekly if enough interest. The goal of the workshops is to provide livestock farms the right tools to get started.
