The Rivington family moved to Central New York in the year 2000 from Canada. They quickly realized the climate and the topography was well suited to a grazing dairy. Over the years "Red Gate Farm" has grown into the second-largest grazing dairy in New York State. Since the dairy is seasonal, their highest milk production is during the fresh pasture season which gives their milk unique traits in fat composition and flavor. These attributes led the family to create Kriemhild Dairy (pronounced CREAM-hild) which produces butter by slowly churning fresh sweet cream into an 85% butterfat creamy butter. The butter is direct marketed through various channels. Join us on July 11th to hear the about the successes and the pitfalls of value added production on a family dairy operation.

Also at the event, Fay Benson with Cornell Cooperative Extension will use the New York Soil Health Trailer supplied by the NY Grazinglands Coalition to demonstrate the benefits of grazing on soil health. The perennial pastures not only maintain the health of the soil but also protect nutrient and soil runoff into area streams and lakes.
