Meat Processing Certificate Training Offered at SUNY Cobleskill Spring 2021

SUNY Cobleskill is happy to announce that they are planning to run their Meat Processing and Food Safety Certificate Program May 17 - June 11, 2021. The hands-on course will cover lamb and goat processing, beef processing, HACCP, and pork processing. The certificate program consists of specialized training in the accuracy of cutting, knife handling, portion control, merchandising, and the utilization of all products. Training includes animal slaughter, primal fabrication, retail cutting, value-added products, safety, sanitation, packaging, and HACCP standards.

A couple of important points to know since the office is working remotely, payment by card is required. Payment in full is required. The on-campus housing option is not solidified, and details will come as they develop. The course is limited to 10 participants, therefore the first 10 people registered and paid will participate. Is Grazing Sheep Beneath Solar Arrays and Opportunity for Your Future?

Grazing sheep beneath utility-scale solar arrays can build wealth of present and future sheep farmers as vegetation management service providers and access to additional pasture. The Cornell Cooperative Enterprise Program (CEP) conducted a survey earlier this year completed by over 600 farmers. Farmers identified barriers to grazing sheep under solar arrays and weighed in on need for a producer-led organization to negotiate contracts on their behalf, coordinate logistics of multiple flocks, provide transport of sheep to and from the site, care for sheep while on-site, and provide supplemental mowing. Additional questions focused on processing and marketing needs.
